This Aged Pecorino cheese has the real Sicilian hard-texture and is hand-made like a DOP cheese. Pairing: its spicy and salty taste, sharp and joyful smell make it perfect as table cheese, for cooking and grating. Excellent with a sweet, deep and intense wine. Ingredients: ewe whole milk, curd, salt, black pepper. Rind: pale white, or amber colored if aged for a long time with signs of basket prints. Texture: hard, firm with a few holes, pale white.
